Ice cream is always a great idea, isn’t it?! Especially on these hot summer days. And best when it’s also healthy!
I made a big bowl of this delicious Coconut-Rosemary-Lavender Nicecream a while ago. Created this with the delicious dairy free milk alternative by @kokodairyfree (*advertisement) ! Wish I’ve had this bowl infront of me right now ….
All you need is eight simple, natural ingredients! Curious? You can find the recipe below.
- 1 cup @kokodairyfree coconut milk
- 1 very ripe banana
- Juice of 1/4 lemon
- 2 branches rosemary
- 2 branches lavender
- Pinch of vanilla
- 1 tbsp maple syrup
- 2 tbsp cashew butter
- Boil the coconut drink together with the lemon juice, rosemary, lavender, vanilla and maple syrup in a small saucepan. Take it from the stove and let it cool down. After cooling, remove the spices from the mixture.
- Now add the coconut mixture together with all other ingredients to a blender and blend until smooth.
- Now fill (if available) in an ice cream machine and let it freeze until creamy. Alternatively, you can put the mixture in the freezer and stir again and again from time to time, it creates a delicious, creamy ice cream as well.
